Chicken Pizza Primavera


Every Friday in our house is pizza & movie night. And while I love traditional pepperoni pizza, it's always nice to change things up a bit. This is my hubby's favorite. (Note: I don't usually use the asiago cheese because it can be a bit pricey, but it's really good on this!)

1 can Pillsbury refrigerated pizza crust (or homemade crust below)
cooking spray
2 T. shredded Asiago cheese
1/4 t. garlic salt
3 T. ranch dressing
1 cup cooked chicken, cubed
1/3 cup red bell pepper, chopped
1/3 cup red onion, thinly sliced
1/2 cup fresh baby spinach, chopped
6 oz. shredded mozzarella cheese

Heat oven to 400. Lightly grease 12 inch pizza pan with spray and roll dough out onto pan. Lightly spray dough with cooking spray. Sprinkle Asiago cheese and garlic salt over dough. Bake for 8 minutes or until lightly browned. Remove crust from oven and spread ranch dressing over crust and sprinkle with mozzarella. Top with chicken bell pepper, onion, and spinach. Return to oven and bake an additional 8-10 minutes or until cheese is melted and pizza is thoroughly heated.


Pizza Crust

1 cup water
2 tablespoons vegetable oil
1 teaspoon garlic, minced
1 teaspoon salt
1 tablespoon sugar
3 cups all-purpose flour
1/2 teaspoon italian seasoning
2 teaspoons parmesan cheese
2 teaspoons active dry yeast

Add all ingredients to breadmaker in order listed by your manufacturer.
Set breadmaker on dough setting. When cycle is done, form two crusts on pizza pans, sprinkle with parmesan cheese, cover and let rise again. Bake 5-10 minutes at 450 F until light brown. Cool. Wrap tightly in foil and freeze (or use).
