BBQ Chicken Sandwiches, Coleslaw, & Baked Beans

This is one of my family's favorite meals. And it's so easy, too!



Crockpot BBQ Chicken Sandwiches
1-2 lbs bonless skinless chicken breasts
1 (18 oz) bottle BBQ sauce (we love Sweet Baby Ray's)
hamburger buns


Place the chicken in the crockpot (can even be frozen) and cover with as much BBQ sauce as needed. Cook on low for 8 hours. During the last half hour of cooking, shred the chicken in the crockpot (a potato masher works perfectly!) and let it soak up the BBQ sauce for another half hour. Serve on hamburger buns.





Coleslaw
3/4 c. mayonaise
2 t. vinegar
2 t. sugar
dash of salt & pepper
bag of shredded cabbage & carrots


Combine first 4 ingredients and pour over cabbage. Let chill at least an hour, longer is better.





Baked Beans
6 c. canned baked beans
3 slices bacon, chopped
1/2 red onion, chopped
1/4 c. brown sugar
1 t. pepper


Preheat oven to 425ยบ. Pour beans into casserole dish and bake until heated (about 10 minutes). Cook bacon in skillet. Add onion and cook 2-3 more minutes. Sprinkle all ingredients over beans and stir. Bake for 10 more minutes.
