I just LOVE these cookies! They are so easy to make and I always have the ingredients on hand. I've always made chocolate but tried lemon for the first time and mmmmmm! I think I'll try strawberry next. :)
1 box Devils Food Cake mix (or flavor of your choice)
1/2 cup of oil (maybe just a little less)
2 large eggs
powdered sugar
Preheat oven to 350. Mix by hand cake mix, oil, and eggs. Roll dough into 24 - 1 1/2 inch balls. Chill for 5-10 minutes. Roll each ball in powdered sugar to coat and bake on an ungreased baking sheet for 8-10 minutes. You almost want them to be under-done so they don't dry out and have a nice chewy texture.
