My family all wanted seconds of this one...and my husband said it was even better the next day as leftovers for lunch

One of the things I loved about this cookbook is that they provided you with options for 1 meal, 4 meals, 6 meals, 8 meals and the complete measures etc for all...I'm only going to provide the info for the 1 meal one today. As well they provided complete freezer preps and grocery lists for doing freezer meals too...

Baked Beef and Pasta
The Big Cook cookbook

1 lb lean ground beef, browned
1.2 cup chopped onion
1 cup frozen sliced carrots
1 1.2 cup frozen peas
2 minced garlic cloves
1 tsp thyme
1/2 cup red wine
1 28 oz can diced tomatoes
1 1.2 cups macaroni
1 cup provolone or romano cheese, grated

Cook beef. Add onion, carrots & peas. Combine garlic, thyme, red wine & tomatoes. Mix thoroughly and add to beef mixture.

Cook pasta for about 13 minuts in boiling water until tender but firm. Add to beef mixture in oven safe casserole. Bake at 350 Covered for 1 hour. Sprinkle cheese just before serving.

This can also be done in the slow cooker... 2 - 3 hours on high or 4 -5 hours low, combine cooked pasta in just before serving.

I used marble cheese and the frozen carrots/peas mixture and it was awesome..

Apple Crisp

This is one of my favorite desserts to make and eat! It is so easy and is soooo yummy!!!

6 apples, peeled & sliced
1/2 cup butter, melted
1 cup flour
1 cup quick cooking oats
1 cup sugar
1/2 tablespoon cinnamon
1/4 cup butter, cut into small bits

Place apples in the bottom of a 9x13 baking dish. Combine melted butter, flour, oats, sugar and cinnamon until crumbly. Sprinkle on top of apples. Dot with bits of butter. Bake at 350º for 50 minutes. The easy part is that you use all canned veggie. You can use fresh or frozen if you desire.

1lb browned ground beef
1 can tomato soup
2 cans full of water (that tomato soup came in)
1 can Rotel tomatoes (I use the mild version)
1 can green beans
1 can corn
1 can green peas
1 can lima beans
4 med. sized potatoes peeled & chopped
Chopped onion, celery, & pepper to taste
salt & pepper

Put all into crockpot and slow cook for 8 hours.

I like my soup thick so that it's more like a stew then drain the cans of veggies. If you like it a more watery like soup should be then don't drain the cans of veggies or add more water.

This recipe can be changed up to suit your taste. The above is listed the way I like it.

Grilled Veggies

If you're going to be doing any grilling this summer (and why wouldn't you?!) then you've got to try these. They are so easy, so tasty, and so healthy. What more could you ask for? :)

Grilled Veggies
sliced/chopped veggies (zucchini, yellow squash, red onions, broccoli, cauliflower, asparagus, mushrooms ... whatever is on sale or whatever you're family likes)
olive oil
garlic pepper

First you'll need a grilling basket. If you're doing a ton of veggies, you may want to steam them for about 10 minutes first so they don't take so long to grill.

Patriotic Parfait

How can you go wrong with Jell-O and Cool Whip?! This is a refreshing and light dessert for any holiday or any day really. I got the recipe from the Kraft Foods website but changed it a little so that the Jell-O held its square shape a little better ... somewhere in between regular Jell-O and Jell-O jigglers.

1 (6 oz) box blue Jell-O
1 (6 oz) box red Jell-O
water
Cool Whip

Pour 1 1/4 cups boiling water into blue Jell-O in an 8x8 dish. Stir about 3 minutes until completely dissolved. Stir in 1 cup cold water. Chill at least 3 hours. Repeat the same process with the red Jell-O. When the Jell-O is set cut into 1 inch cubes and layer with Cool Whip. Enjoy. :)

Southern Fried Corn

You just can't beat good home style Southern cookin'! This recipe is very time consuming but will worth it. I also need to add that it's best if cooked in a cast iron skillet.

Southern Fried Corn
serves/makes= 6

6 ears fresh corn
1/4 cup cup bacon drippings
2 tbsp flour
1 tbsp sugar
1 cup water
1/4 cup milk
salt and pepper to taste

Note: if you don't have bacon drippings (not everyone keeps these), you can use a little bit (1/8 cup maybe) of vegetable oil.

1) Shuck corn, wash, and remove silk. Cut corn cobs in half and then cut kernels off. (This is called cream-style cutting)

2) Scrape juice out of the corn cob into the corn. Heat drippings in large skillet. Add corn, flour, sugar, water, milk, salt and pepper. Bring misxture to a boil, stirring constantly.

3)Cover, reduce heat and simmer for about 20-25min until corn is tender. If necessary, add a little hot water.
Note: I used my cast iron skillet which doesn't have a lid to cover with so I just reduced the time to 15min and it came out great!

This recipe is from CDKitchen

Crockpot French Dip Sandwiches

Mmmm, these were so yummy!!! I found this recipe on another great cooking blog Our Best Bites. The only thing I would change next time is to shred the beef in the crockpot and let it cook in the juices for the last hour. And maybe add some caramelized onions ... mmmm!

French Dip Sandwiches

1 2.5-3 lb. beef roast (you can use a frozen roast if you want)
2 Tbsp. olive oil
salt and pepper
2 1-ounce packages dry onion soup mix
2 c. water
2 cans beef broth
6-8 large buns (or more...6 would be VERY generous servings!)
Swiss, provolone, or mozzarella cheese, shredded or sliced.

Heat oil in a large pot over medium-high heat and rub roast with salt and pepper.

When very hot, carefully place roast in pan and sear on all sides. You're not cooking the meat, you're just browning it quickly on all sides to add flavor and seal in the juices.

Place in crockpot and sprinkle with onion soup mixes. Pour water and beef broth over roast.

Cook 8-10 hours on low or cook 4-5 hours on high and another 3-4 hours on low. When meat is ready, shred with a fork.

Place meat in crusty rolls. Top with cheese and broil open-faced in the oven or toaster oven for a few minutes, until bread is golden and cheese is melty.

Ladle juices into small cups for dipping and enjoy!

Spanish Spirals

I came across another great recipe blog a bit ago called Delicious Dishes. I've always hated cooking bacon on the stove - time consuming, hate the grease splatters, etc. And I've never gotten it crisp enough in the microwave. I usually use the ready-made bacon you can microwave, but that stuff is expensive. So I read somewhere that you can bake it and so I tried it and it works perfect!!! You can do a lot at once, don't have to tend to it, and no grease splatters. Just delicious, crisp, wonderful bacon. :)

Preheat oven to 350 and line a baking sheet with foil. Place the bacon flat on the foil without overlapping the pieces. Bake for 15-20 minutes until crisp and drain on paper towels.

Brown Sugar Chili

I found this recipe on the A Cherry on Top Forum....I can't recall who submitted it, but I felt it was worth a try...my kids hate spicy stuff so I hoped it would be a winner...

1 lb ground beef or ground turkey
1/2 cup brown sugar
2 Tbsp. prepared mustard
1 medium onion, chopped
2 14 oz cans Kidney beans, drained
1 pint (2 -12 oz cans) tomato juice
1/2 tsp salt
1/4 tsp pepper
1 tsp chili powder

1) Brown ground beef and onion in a nonstick skillet over medium heat. Bake at 350 for 25-30 minutes.

Easy Doughnuts

Ever since I made homemade bagels my daughter has been begging me to make homemade doughnuts. We happened to be watching a cooking show the other day where they used refrigerated biscuits to make them. So that's exactly what we did! And they were easy and super yummy. :)

Easy Doughnuts
refrigerated biscuits
oil
toppings

Heat 1 inch oil in a skillet. Separate biscuits and flatten a little with your hand. Using a small round cookie cutter, cut a hole in each biscuit. (I didn't have any small circles so we used hearts instead! You could also use the cap of a water bottle.) Fry the biscuits and the holes in the oil until brown on each side. Top them with whatever you want. We did half in just sugar and half in a frosting made of powdered sugar & milk. Both tasted great!

Cream Cheese Stuffed Mushrooms

These are so quick and simple to make .... and very addicting! Unfortunately (or maybe fortunately for my wallet!) we don't have an Einstein's -- or any bagel place for that matter -- around here. So when I came across a recipe for Asiago bagels, I knew I just had to try it. And for my first attempt at homemade bagels they turned out so yummy! My head is already spinning with different toppings I can use. I will never buy bagels again! :)

Ingredients:

                                     1 cup plus 2 tablespoons warm water (110 degrees F/45 degrees C)

                                     1 1/2 teaspoons salt

                                     2 tablespoons white sugar

                                     3 cups bread flour

2 1/4 teaspoons active dry yeast

                                     3 quarts boiling water

                                     3 tablespoons white sugar

                                     1 tablespoon cornmeal

                                     1 egg white

Directions:

Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting.

When cycle is complete, let dough rest on a lightly floured surface. Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with the dowel end of a wooden spoon. Twirl the dough on the dowel to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 30 minutes.

Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar. Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg white, and sprinkle with your choice of toppings.

Bake in a preheated 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned.

Variations:

For Asiago cheese bagels, add 1/2 cup shredded Asiago during the last portion of the dough cycle and sprinkle with extra cheese after the egg wash.

For cinnamon raisin bagels, add 1/2 cup raisins and 2 tablespoons cinnamon during the last portion of the dough cycle.

For blueberry bagels, fold in 1/2 cup blueberries after the dough cycle is finished.

Topping ideas: parmesan cheese, poppy seeds, cinnamon/sugar, garlic salt & onion powder, sesame seeds, etc.

Chicken Pizza Primavera

Every Friday in our house is pizza & movie night. Serve with chips or toasted bread.

Spaghetti Casserole

12oz spaghetti noodles
8oz sour scream
8oz cream cheese (softened)
8oz cottage cheese
Regular jar spaghetti sauce
Onions, peppers, mushrooms, chopped (optional)
(easy way is to buy spaghetti sauce with these already in it)
Ground beef, as desired
1 pkg. pepperoni
Mozzarella cheese, as desired
Parmesan cheese
Salt and pepper

Spray large baking dish with cooking spray. For my family (2 adults and 5 kids over 5 years old), this could be made into 2 meals. When making the casserole, split it into 2 8x8 or 9x9 pans. Eat one for dinner and put the other into the freezer.

Salisbury Steak

The mustard is a nice change to this classic dish. Four chefs prepare an appetizer, entrée, and dessert, each course within 30 minutes and each using a bizarro combination of bizarro ingredients found inside a picnic basket. At first, I thought what I enjoyed about this show was that it’s a complete series in a nutshell and an hour of nonstop action. At the end, three competitors are eliminated and the $10,000 winner revealed. No tune-in-tomorrow strung out hour-long results show. Sometimes I think the judges are too hard on contestants working under difficult restrictions, but now I realize that’s where the reality comes in. You don’t always have much time or the desired ingredients available to cook a meal. And whatever you prepare, you set it down on the table in front of picky eaters. (I do anyway.) Most intriguing to me is the invention, the creative ways these chefs use the strange ingredients to produce something edible.

Ham N Cheese Pasta

I am NOT Rachael Ray's biggest fan...in fact she drives me freakin' insane. But I digress, this recipe could definitely be described as YUM-O, as RR would say. The kids loved it because I substituted Pixar's Cars shaped pasta for bow-tie pasta. Hubby loved it because of the leftover Easter ham and I loved it because of the asparagus!

Ham 'n' Cheese Pasta

SERVINGS: 4

TIME: Prep/Total Time: 30 min.
Ingredients:

* 3 cups uncooked bow tie pasta
* 3/4 pound fresh asparagus, trimmed and cut into 1-inch pieces
* 2 tablespoons butter
* 1 teaspoon minced garlic
* 2 tablespoons all-purpose flour
* 1/4 teaspoon onion powder
* 1/4 teaspoon pepper
* 1/8 to 1/4 teaspoon dried thyme
* 2 cups milk
* 2 cups (8 ounces) shredded cheddar cheese
* 1/2 cup grated Parmesan cheese
* 1/2 pound sliced deli ham, chopped (I substituted leftover ham from Easter)

Directions:
Cook pasta according to package directions, adding asparagus during the last 3 minutes.
Meanwhile, in a large saucepan, melt butter; add garlic. Stir in the flour, onion powder, pepper and thyme until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
Reduce heat. Add cheeses; stir until melted. Stir in ham; heat through. Drain pasta and asparagus; toss with cheese mixture. Yield: 4 servings.

This recipe says it makes 4 servings and I usually consider 4 servings to be exactly enough for our family of 4 but probably not enough for any other family of 4 with older children. However, this recipe made plenty. We all had seconds PLUS lunch the next day.

Enjoy!

Creamy Scalloped Potatoes

What is Easter ham dinner without scalloped potatoes. I once again turned to the new Fix It or Forget It Big Cookbook and found this recipe. It reminded me of the oven ones I make. Because I used way more potatoes than it called for, they in turn took longer to cook than the recipe says. But...so do my oven ones LOL!!

Ingredients:

6 large potatoes, peeled and thinly sliced
1 small onion, thinly sliced
1/4 cup flour
1 tsp salt
1/4 tsp pepper
2 tbsp butter, melted
1/4 cup milk
10 3/4 oz can cream of mushroom soup
4 slices american cheese, or 1 cup shredded cheddar cheese

Place half of potatoes in slow cooker. Top with half of onion, flour, salt and pepper. Repeat layers. Mix together butter, milk, and soup. Pour over potato layers. Cover. Cook on Low 6 - 9 hours or on High 3-4 hrs or until potatoes are soft. Add cheese 30 minutes before serving.

Variation: Eliminate 1/4 cup milk. Simply top seasoned and layered vegetables wtih chunks of butter and then pour soup over top.

Ground Beef Pizza Fondue

Those that know me know that I find it hard to resist a recipe swap!! I loved it!! My hubby said it was ok! My 7 yr old ate it without complaint...the 4 yr old wouldn't try it...he wanted pizza....real pizza...lol!!

Ingredients:

1 lb ground beef
2 cans pizza sauce with cheese
8 oz cheddar cheese, shredded
8 oz mozzarella cheese, shredded
1 tsp dried oregano
1/2 tsp fennel seed, optional
1 tbsp cornstarch

Brown ground beed, crumble fine and drain. Select Dough/Knead and First Rise Cycle; press Start.

When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

Bake in preheated oven for 10 to 15 minutes, until golden.
Makes 16 rolls

I don't have a bread machine so I followed the directions that K PRAPER posted in her comments. Her directions were very helpful and these rolls are very easy to make! Those they aren't as sweet as I thought they would be. Lay 1 hot dog on side with end facing you. Starting 1 inch from the end, slice hot dog vertically in half. Roll hot dog 1/4 turn and slice in half vertically again, making 4 segments connected at the top. Slice each segment in half vertically, creating a total of 8 "legs." Repeat with each hot dog.

2. Place hot dogs in medium saucepan; cover with water. Bring to a boil over medium-high heat. Remove from heat; set aside.

3. Prepare pasta according to package directions, stirring in vegetables during last 3 minutes of cooking time. Drain; return to pan. Stir in Alfredo sauce. Heat over low heat until heated through. Divide pasta mixture between 4 plates.

4. Drain octo-dogs. Arrange one octo-dog on top of pasta on each plate. Draw faces on "heads" with mustard. Sprinkle crackers over pasta.

Here's the end result:

Strawberry Cream Cheese Pie

This was absolutely delicious!! Never have made spritz cookies before I decided to start off with the recipe that appears on the box. I made these exactly as the recipe reads. Once cooled I dipped one half of the cookie in pink colored white chocolate.

1 1/2 cups butter
1 cup granulated sugar
1 egg
2 tbsp milk
1 tsp vanilla
1/2 tsp almond extract
3 1/2 cups all-pupose flour
1 teaspoon baking powder

Preheat oven to 375 degrees F. Thoroughly cream butter and sugar. Add egg, milk, vanilla, and almond extract; beat well. Stir together flour and baking powder; gradually add to vreamed mixture, mising to make a smooth dough. Do not chill. Place dough into cookie press and press cookies onto ungreased cookie sheet. Bake 10-12 minutes or until lightly browned around edges. Remove cookies from sheet; cool on rack.

Makes 7-8 dozen cookies.

My opinion: The cookies turned out dull tasting even with the white chocolate on them. My kids enjoyed them and I was told by others that they turned out good.

"Stroken' Off"

The name of this came from pure fun between my husband and I. (This calls for a good bit of black pepper.)
Serve beef mixture over noodles.

5 Reasons To Drink Green Tea

1. My mom use to make this all the time when I was a kid. Of course then I wasn't a big fan but as I have gotten older I miss it. I have taken her recipe and added to it. Here is my version.

1lb ground beef
1 can green peas
fresh onion
mashed potatoes (using 5 med-lg potatoes)
cheese of your choice

1) Brown the ground beef with diced onion for taste. Add seasonings of your choice. I have used anything from just black pepper and salt to taco seasoning.
2) Place beef in the bottom of a casserole dish. (I typically use a 9x13 glass dish.) Then top with shredded cheese.
3) Drain can of peas and place on top of the cheese. Then top peas with more cheese.
4) Make another layer with the mashed potatoes and top with more cheese. (I have tried instant mashed potatoes and it doesn't turn out so well.)
5) Place in oven at 350 degrees until cheese melts.

Veggie Soup Version #2

This is my own version of veggie soup that I like the most.

1lb Ground Hamburger Meat - I usually brown it will some finely diced onion
2 cans mixed veggies or
1 can green beans
1 can peas
1 can lima beans
1 can carrots
1 can corn
3 or 4 small-medium potatoes - piled and chopped to small pieces (I like extra potato in my soup)
1 can Rotel Tomatoes Mild (the regular Rotel is too hot and you can't taste the soup)
1 15oz. can of tomatoe soup (if you use the individual cans of veggie then you will need 2)
Salt and Pepper to taste

I like to put all of these in a Crockpot and let it slow cook it all day.

Veggie Soup Version #1

This is my own version of veggie soup that I make when I think my kids will actually eat it.
